LUNCH – Torn Spinach & Steak Salad with Peaches & Parm
If you have been following along here for any amount of time, you have probably figured out, that I love leftovers. I know some people don’t, but for me they are a lifesaver. I think the big difference for me, is that I like to reinvent leftovers, so that things don’t get boring. I treat the leftovers from dinner as supplies for making lunch, so I almost always plan for leftovers.

To make this salad, I used the steak that I had leftover from dinner and cut it into thin strips and then into bite size pieces. I tossed it with some baby spinach leaves and cut up peaches, then added a squeeze of lemon juice, a bit of salt & pepper and some shaved Parmesan cheese. I served it with corn wheels, from some cobs of corn I also had leftover from dinner.

It’s not anything like the steak, roasted potatoes, corn and garden salad that we had for dinner. It’s reinvented into a fresh lunch salad, that is just as appetizing as a finger salad for the kiddos, as it is a full salad packed for a school lunch or work lunch.

SNACK – Plain Greek Yogurt with Bran Sticks & Frozen Fruit
I thickened plain yogurt overnight to create the thick and creamy greek yogurt for this snack. It’s so delicious and really easy to do, just line a strainer with cheese cloth and set it over a medium-sized bowl. Scoop the yogurt into the cheese cloth lined strainer, cover with a clean dish towel and place in the fridge. Then wake up to a wonderful yogurt treat.

We often add a crunchy topping to our yogurt. The kids call these bran sticks “crunchy sticks” and they love them. It’s a great way to take a healthy cereal, that a lot of kids would not like a bowl full of, and serve it in a fun appealing way. I look for a whole grain cereals with very few ingredients, preferably only the grain itself.

SNACK – Personal Fondue with Assorted Veggies
This is hands down one of my daughters’ favourite after school snacks. I try to remember to serve this when she has a friend over after school. Then I watch them devour plate full’s of vegetables. She takes this in her school lunch too, the cheese sauce thickens, but she just scoops it out:)
