LUNCH – Pancake Sandwiches with Ham & Lettuce, Veggies & Dip
Mini pancakes are a fun way to make sandwiches for lunch. I ended up making two batches of these Cottage Cheese Pancakes. After following the recipe (I used spelt flour) for the first batch, I thought the pancakes were a bit sweet for ham sandwiches, so I made a second batch and left out the honey and vanilla. The first batch I put in a freezer bag and popped it into the freezer for breakfast, snack or lunch another day.
SNACK – Rice Cakes with Peanut Butter & Bananas and Blackberries
I really like these thinner rice cakes because they are easier to eat with toppings on them – and they are so much more fun with toppings. Here we had peanut butter, bananas and for a bit of crunch, some grapes cut in half. I love snacks that allow the kids to decide whether or not to eat everything together, or to eat them individually. With this snack, a few of the kids ate the bananas and grapes first and then ate the rice cake with peanut butter.
This was a very messy snack – so have those face cloths ready. Another way to control the mess is to cut the rice cake in half (or in quarters), a bread knife works nicely, and sandwich the peanut butter between the two. The bananas and grapes could be served, on the side, or sliced and included in the sandwich.
SNACK – Fruit Salad & Oranges
With the fruit bowl overflowing with ripe fruit, it was time to make some fruit salad bowls. I cut up all the ripening fruit and put it into a large bowl. After snack, whatever didn’t get served, I put in a freezer bag and popped it into the freezer for smoothies another day.
Wow, after today snack just might make itself:)
