LUNCH – Pizza on Flatbread and Baby Romaine Salad
We had an impromptu pizza party to celebrate our first snow day, a simple and fast way to throw lunch together for a crowd in a hurry. With flatbread in the freezer, a few ingredients in the cupboard to make a simple Classic Tomato Sauce (that I blended smooth and then simmered to thicken), mozzarella cheese in the fridge and luckily some pepperoni, we had 6 small pizzas made in no time.

Romaine is often the first lettuce kids like, to take it a step further and expand their leafy green (and purple) comfort zone, I like this baby romaine mix I can get at the grocery store. It is still mild and crunchy, but the added colour introduces a new element to our Caesar salads.

SNACK – Smoothie “Soup” with a dollop of Yogurt & Cinnamon Croutons
This is a fun twist that you can do with any smoothie recipe. All the kids around here love smoothies, but soup…not so much. So, with soup season upon us I thought I would take a new approach and ease into soup. Really the only difference between smoothies and soup is that smoothies are cold and are made with fruit as well as vegetables. Soup mostly vegetables. First step smoothie soup. Second step very veggie smoothie soup. Third step warmish pureed soup (maybe butternut squash and apple?). You see they aren’t so different are they? We’ll see:)

For this smoothie I used the juice from 1 orange (they are so juicy right now), 1 cup of frozen fruit (strawberries, cantaloupe & pineapple) and spinach.

To make the cinnamon croutons I cut the crusts off of 4 slices of whole wheat bread and then cut them into 1 inch cubes. In a bowl, I tossed the bread cubes with 3 tbsp of melted butter and sprinkled them with cinnamon, stirring to coat. Then I toasted them in the oven at 350°F on a baking sheet, stirring occasionally, until they were golden brown, about 15 minutes.

SNACK – Apple Sauce with Pumpkin Maple Pecan Granola
Having granola in the pantry means there is a healthy snack ready to go anytime. This Pumpkin Maple Pecan Granola is one of our favorite granola recipes and is delicious as a topping on apple sauce, like we had here, on yogurt, on apple pops or sandwiches, with milk – or on its own. I always make sure I have at least one kind of granola in the pantry at all times.
