LUNCH – Chicken Quesadillas with Veggies
I turned our leftover chicken fajitas from dinner into chicken quesadillas for lunch. They are great for packing in school lunches because the melted cheese holds them together. I just make up a few right after dinner, while all the wraps, chicken, cheese and toppings are out. Then after they cool down, I pack them in a lunch container and the kids take them to school cold.

Depending on your kids preference, you could either add the appropriate veggies (peppers, mushrooms etc.) right to the quesadilla or pack them in a separate container to be eaten on the side. Oh, and don’t forget the salsa and plain greek yogurt for dipping (quesadillas and veggies allowed:)

SNACK – Gingerbread Oatmeal with Dried Cranberries & Pear
We had this for our morning snack, but obviously it would make a terrific breakfast too. I added dried cranberries and gingerbread spice to my regular oatmeal recipe and then sprinkled a littel extra spice mix on top so the kids could see it and we could talk about how good it smells and tastes.

For the oatmeal, I used the Make Ahead Oatmeal recipe with the add-ins mentioned above. To make the gingerbread spice I use 1 part cinnamon, 1 part ginger, 1/2 part all spice, 1/2 part nutmeg and 1/2 part ground cloves. I always make a big batch in November because we use it to make gingerbread play dough and other craft/art/sensory activities as well as cooking with it, so I typically use cup measurements (1 cup cinnamon, 1 cup ginger, 1/2 cup all spice, 1/2 cup nutmeg, 1/2 cup ground cloves), but you could also make a much smaller batch using teaspoons or tablespoons. We are just finishing up the last of our spice mix now:)

SNACK – Avocado Deviled Eggs with Carrots, Tomatoes & Cucumber
I have served these Avocado Deviled Eggs for both lunches and snacks, the funny part is they are kind of an anomaly. Some of the kiddos don’t like hard boiled egg yolks and some of them don’t like avocado. but when I put them together they all gobble them up. Like magic. To make these deviled, I sprinkled on some paprika. ‘Cause it looks pretty and tastes great:)
