LUNCH – Broccoli Cheddar Mini Frittatas & Salad Skewers
These Broccoli Cheddar Mini Frittatas are a great handheld size lunch for the kiddos, but they also make an easy dinner for the whole family. In fact we had these for dinner the night before, along with a salad dressed with Honey Dijon Dressing. To switch it up a bit for lunch I used the same salad ingredients and made salad skewers, I also served the same honey dijon dressing but as a dip instead of dressing the salad skewers. If having leftovers for lunch from the night before is a little too repetitive for your family, you can always skip a day or two in between.
Texture can be a big issue for kids. For the 5 kids I was feeding this lunch to, 3 gobbled the frittatas up whole, without any hesitation. 2 of the kids however just nibbled at them, until I cut them into quarters and suggested they use their skewer to eat them with. Both ended up eating 2 full frittatas (cut up).
SNACK – Make Your Own Granola Cereal
Make your own snacks are always a hit with the kids. We’ve done it with oatmeal, popcorn, yogurt and now with granola. This recipe was adapted from the granola cereal recipe at 100daysofrealfood.com, adapted with what I had on hand that is. For the nuts I used 1 cup of almonds and 1 cup of walnuts, for the seeds I used 3/4 cup of sesame seed and 1/4 cup flax seeds and I left out the ginger. It’s a great recipe, makes a large amount and I like that I can switch it up and make it different.
For this make your own snack I gave the kids each a bowl of granola cereal, a small bottle of milk and a bowl of fruit. They got to choose whether to pour the milk into their cereal or drink it from the bottle. They also got to choose whether to add the fruit to their cereal or to eat it on the side. I find with these interactive, do it yourself snacks that the kids often try new things, because they have the freedom to choose and it is fun for them to create their own snack.

SNACK – Heavenly Carrot Cake Baked Oatmeal
I have to say I love oatmeal bakes. Not only are they easy to prepare (often I prepare them the night before) and pop in the oven, but I can walk away and let the oatmeal take care of itself while I get on to our regular morning busyness. And then, as if I need more reason to love them, I can serve them for breakfast, refrigerate the leftovers and serve them again as an oatmeal bar for a snack, like I did here. That’s two for the time of one. Oh and yummy oatmeal, wonderful kitchen smells and hearty breakfast and snack.
I have served this same Heavenly Carrot Cake Baked Oatmeal as a morning snack with yogurt and some maple syrup, as well as this Maple Cinnamon Apple & Pear Oatmeal Bake with milk and banana and this Baked Pumpkin Oatmeal with fruit – all were delicious.
