LUNCH – Egg & Bacon on Chive Biscuits & Veggies
Leftovers from this lunch were a go-to breakfast for a few days because it was so yummy. The Bacon and Chive Biscuit recipe is from the How to Feed a Family Cookbook (a cookbook I love) from Sweet Potato Chronicles and I used a 2″ biscuit cutter to keep them nice and small. I decided to leave the bacon out of the biscuits and instead crumble it on top of the scrabbled eggs. I also gave the kids a fork, so they had the option to either picking it up and eat it like a sandwich or to eat the eggs with a fork and the biscuit separately. And as I mentioned earlier, making enough to have leftovers is definitely a plus for a quick healthy breakfast.
SNACK – Make Your Own Oatmeal with Apples, Raisins and Milk
We have oatmeal for morning snack usually once a week and because everyone likes different topping, some in, some out etc. and because kids like being able to make choices, make-your-own anything is usually a big hit. This snack is especially fun because they also get to pour their own milk. Sound messy? Well, it’s surprisingly less messy than you might think. I put a small amount of milk in a small cup, pitcher or, like here, bottle making sure that if they dump the entire bottle in (which is usually what happens initially:) that it would be an appropriate amount. Then the kids decide if they want to add the milk or drink it, add the toppings or eat them on the side. It’s fun to get the kids to name their creation too!
SNACK – Carrot “Donuts” with Cream Cheese “Frosting” & Raspberries
We’ve been having a lot of fun with these little mini “donuts”. They are actually made from a Whole Wheat Carrot Muffin recipe (I used spelt flour instead) that I baked in these fun mini donut pans. To make the “frosting” I mixed in a few drops of maple syrup to some cream cheese, iced the donuts and then sprinkled them with a bit of cinnamon. And some raspberries on the side, one for every finger. Do your kids like eating raspberries off their fingers? It sure is good for a lot of laughs here:)
