LUNCH – Club Sandwiches on a Stick & Veggies
Whole grain bread, spinach leaves, leftover chicken from dinner, tomato, cheese and an assortment of veggies on the side. Triple decker & on a stick – it makes all the difference. Some of the kids took their sandwiches apart, took out what they wanted to eat on the side and then reassembled them and put them back on the stick. As fun as the stick is, it is really great at holding the sandwich together too:)
SNACK – Chive Biscuits with Cream Cheese & a Fruit Bowl
These were leftover biscuits from lunch the other day. Making double batches, or even just more than we need for one meal, is one of my favorite ways to make my time in the kitchen more efficient. This time I topped the biscuits with cream cheese (yum with the chives) and served them with a bowl of fruit.
SNACK – Fruit Kabobs & Cheese Towers
Fruit kabobs are so fun, but add to that cheese blocks for snack? Heck yes! Fun, nutritious and they definitely created a conversation buzz at the table, as everyone got to building. I will absolutely be serving these again but next time micro blocks – same amount of cheese, but cut into smaller blocks.
