LUNCH – Crock-Pot Chicken Noodle Soup & Grilled Cheese Croutons
This crock-pot chicken noodle soup was delicious – we had it for dinner and then we had the leftovers for lunch. I love leftovers for lunch. It is hands down the easiest way to save time in the kitchen. But it gets better because I added two extra chicken breasts to the crock-pot for another dinner & leftovers for lunch combo. I know, awesomeness!
The grilled cheese croutons I made simply by making a regular grilled cheese sandwich. After grilling I used a bread knife to cut the crusts off and then cut the sandwich into little squares.
SNACK – Make Ahead Oatmeal with Cinnamon, Pecans and Blueberries
If you don’t have time to cook oatmeal in the morning or if you have leftover oatmeal from a batch you have cooked, filling up some silicone baking cups and storing them in the fridge is a great way to enjoy oatmeal on the fly. The silicone cups are heat resistant, so the oatmeal can go in hot and then cool off in the cups. Once cooled I put the silicone cups into an airtight sandwich container and then pop it into the fridge. The oatmeal can be reheated right in the cups too – in the microwave or on a baking sheet in the oven. And the oatmeal comes out nice and easily when it’s time to eat it. After reheating, I turn out the oatmeal into a bowl, add some milk and some toppings and stir it all up.
SNACK – Heads or Tails Veggie and Cream Cheese Coin Sandwiches & Extra Veggies on the Side
Cucumber sandwiches are fun and you can make them different every time. I’ve made them with the carrot shredded and added as a filler along with the cabbage, but here I decided to use both cucumber coins and carrot coins for a little variety and some added fun. Heads or tails?
Replacing what would traditionally be a cracker snack with what becomes a very veggie snack is something I am always trying to accomplish. I find after school and before dinner are perfect times to serve veggie heavy or veggie only snacks because the kids are hungry and will eat more vegetables than they might normally.
