LUNCH – Spinach & Bacon Crustless Quiche and Festive Veggies
These crustless quiches are handy to have around. They are quick to make and you can use whatever vegetables you have on hand. They are perfect for a quick breakfast, lunch or light dinner along with a salad. They pack well in school lunches or work lunches. They keep in the fridge for a few days and in the freezer for a couple of months. Handy right?

To make: I whisked 10 eggs in a large bowl and set aside. Then, using a pastry brush, I generously greased a regular muffin pan with olive oil. I added diced cooked bacon, chopped fresh spinach and shredded cheddar cheese to each of the muffin cups. Then I filled each muffin cup with the whisked eggs until they were 3/4 full. Popped the pan into a preheated 375°F oven, for about 30 minutes, until the egg was set and slightly golden .

SNACK – Avocado Chocolate Smoothie & Raspberries
This smoothie was a glass of thick, chocolatey deliciousness and the kids went at it like it was a milkshake. It was good! I decided to add an extra banana because I could taste the avocado, just slightly, but I thought more banana taste, especially along with the chocolate would be more appealing to the kids. And of course raspberries and chocolate should be best friends.

SNACK – Rice Cake & Cream Cheese Christmas Trees with Veggie Decorations
This was a fun DIY decorating snack. A healthy twist on the traditional cookie decorating that kids love so much this time of year. Making veggies fun is something I am always striving for, but it seems even more important at this time of year because so many sweets surround us and our kids during the holiday season.

I used a serrated bread knife to cut the rice cakes into triangles – lining up the knife from the lower corner to the center top and using a sawing action, then repeating on the other side. They were the square thin type of rice cakes like the ones we had here. Oh, and save the bits, they are great for snacking on. Then I spread cream cheese on them and the kids did the decorating.
