LUNCH – Banana Egg & Spinach Pancakes with Red Peppers & Green Beans
I made banana & egg pancakes a while ago and the reaction from the kids was so great that I have been wanting to try this banana, egg and spinach variation. I have to tell you I was a bit hesitant about how the spinach would go over. There are 2 cups of spinach along with the 1 banana and 2 eggs. Those are my food preferences showing through folks, but shoving them aside I gave these pancakes a try. When what to my wondering eyes did appear, but three eager kids who downed them right here. Lesson learned!

I just laid the pancakes out and topped them with cream cheese, red peppers and blanched green beans. Some of the kids ate the veggies separately and then ate the pancake and some rolled up the pancake and ate it all together (some did both).

SNACK – Waffled Gingerbread Man & Festive Fruit
To make the waffled gingerbread men, I first made the same waffles that I made for these gingerbread waffle houses. After cooking the waffles, I used a gingerbread man cookie cutter to cut out the gingerbread shape. Super easy. And save those bits that are left over after cutting out the gingerbread, the kids gobbled those up too. I served a bit of maple syrup on the side for dipping, some pretty interesting table talk went on when those gingerbread men took a header in the syrup:)

SNACK – Nachos
Nachos but healthier. I will take a one ingredient whole grain over a nacho chip any day when it comes to serving a healthy snack to the kids. Spoon Sized Shredded Wheat is a perfect base for some shredded cheese and anything else you want to load on. They stay nice and crunchy and are a kid friendly size. Here I served salsa, avocado (mashed with the juice of half a lime) and plain greek yogurt to dip in. I love these three dips because they are what I call “spoon worthy”. Tasty enough to eat off a spoon and healthy enough that I’m happy if the kids do.
