LUNCH – Eggs in a Cup
This is a throwback to my childhood. My dad used to make these for us all the time. After hard boiling the eggs he would peel them, put them in a tea cup and using a fork he would mash them up with some butter, salt and pepper. To this day, eggs in a cup remind me of lazy weekend mornings. It’s funny how simple some of our best childhood memories are.

Just a little note, my dad would always make this big hilarious scene about how the eggs were burning his fingers while he peeled them. To avoid burning your fingers (or the big hilarious scene) run the cooked eggs under some cold water before peeling, to cool them off enough to handle.

Having eggs in a cup adds an element of fun for the kids (I think it’s pretty fun myself:), but they also enjoyed using the veggies, served on the side, as scoops to eat the eggs. Kids are so clever.

SNACK – Yogurt Parfait with Strawberry Peach Sauce & Blueberries
Yogurt is one of our favorite snacks and this past fall we made the switch from store bought vanilla flavored (and sweetened) yogurt to plain greek yogurt. The kids love the thick, creamy texture of the greek yogurt, but a few have struggled with the much less sweet taste. In order to add some of that sweetness back we have had some fun with different toppings and sauces, including the one I served here.

The sauce is the strawberry sauce leftover from yesterdays bananas in strawberry sauce, but there wasn’t quite enough leftover, so I added some frozen peaches to the sauce and re-blended  it, which gave us enough for this snack and a bit of a change in flavour from yesterday. After topping the yogurt with the sauce, I added a few fresh blueberries to finish it off.

SNACK – Cucumber with Cream Cheese & Tomato
This is a very quick and easy snack that can be pulled together in just a few minutes. Sliced cucumber topped with cream cheese and a small slice of tomato. If your kids don’t like tomatoes try a different topper like carrot, radish, celery…pretty much any vegetable would work:)
