LUNCH – Broccoli Cheddar Soup & Cornbread
I love broccoli and cheddar soup and this one is super easy to make. In a medium saucepan, I cooked 4 cups of broccoli florets in 3 cups of vegetable stock until soft. Once cooled slightly, I transferred the stock and broccoli mixture to a blender and blended it until smooth.
While the mixture was cooling I melted 1 tbsp of butter in a medium saucepan, over medium heat. Then I added 1 tbsp of flour (I used spelt but you could also use all purpose flour) and stirred until the butter and flour were combined, cooking it for 1-2 minutes. Then I added 1 cup of milk, stirring constantly until thickened. Once thickened, I removed the pan from the heat and stirred in 1-1/2 cups of shredded cheddar cheese until melted.
Then I added the blended broccoli and stock mixture to the cheese sauce, stirring to combine and reheated it over medium heat and served it with cornbread.
SNACK – Egg & Banana Pancake Roll Ups with Strawberries & Kiwi
The kids love these! I have never made enough, you would think I’d learn, but everytime I have made these the kids have eaten them all. And they are ridiculously easy to make.
Blend together 1 banana and 2 eggs and cook them like a pancake. I used a gravy ladle to pour the batter on the pan, it was the perfect amount to make these little pancakes. Then I carefully spread cream cheese (1/2 cup of cream cheese mixed with 1 tsp of honey for the batch of pancakes), over the pancakes, topped them with blueberries and rolled them up and served them with strawberries and kiwi on the side. This recipe makes 12 pancakes, so clearly I need to double the recipe:)
SNACK – Cinnamon Raisin Quick Bread with Blackberries & Cantaloupe
Quick breads make an easy snack. What isn’t so easy is finding a healthy quick bread that you can actually call a “snack” instead of a dessert. And while this one, from 100 Days of Real Food, has enough sweetness to satisfy a craving, I am also happy to serve it at snack time.
