LUNCH – Egg Salad Lettuce Wraps
Lettuce wraps are a great way to take a little break from bread. I used boston lettuce leaves, topped them with egg salad and then shredded carrot. For the younger kids who still have trouble eating lettuce, I just chopped the lettuce up very finely and mixed it into the egg salad and served the shredded carrot on the side, but you could mix the carrot in too.
SNACK – Double Decker Banana Pops
The first time I made banana pops the kids devoured them, so I knew I would be making them again. This time I decided to switch things up a bit and stack two varieties with a slice of strawberry in between.
First I sliced the bananas and the strawberries crosswise. Then I slid the first banana slice onto the popsicle stick and, while holding onto the stick, I rolled the banana slice in some chia seeds, that I poured onto a plate. Next I slid on the strawberry slice, followed by the second banana slice. Finally, using a knife, I covered the second banana slice with peanut butter.
SNACK – Mini Veggie Bites
Meet the Mini’s. What makes this snack fun is simply the play on size. These adorable mini veggie bites are just a playful way to feature vegetables in their mini varieties. Mini cucumbers, grape tomatoes, mini carrots with those oh so tiny mini clementines on the side. And it couldn’t be simpler to make either, just slice the veggies and stack. Proof that making food fun doesn’t have to be difficult.
