LUNCH – Chicken Sliders with all the Fixings
I haven’t had a lot of luck finding whole grain slider buns and yes, I could make them myself, but when that’s not an option, whole grain baguettes work very well. They are just the right width for a slider and, of course, can be cut to any length, so with some baguette leftover from dinner, that’s what I did.
These are the same chicken sliders I served here. They are the easiest things to make – just ground chicken, some bread crumbs (but I think next time I will try making them without bread crumbs and see what happens – one less step:) and some spice. Now here’s the thing, the spice mix that I have been adding, was a homemade gift from a friend. No idea which spices are in it, but it is meant for chicken, so I think any spice mix made for chicken would work. I definitely need to experiment (coerce my friend into revealing their secret spice mix) and nail down a real recipe for this one soon.
SNACK – Apple Sauce & Berries with Heart French Toast
Apple sauce and frozen berries is such a simple snack. Apple sauce in the pantry and frozen fruit in the freezer means that this can be a go to snack or breakfast anytime. The french toast hearts are a fun way to celebrate Valentine’s Day, I just made this french toast recipe, but left out the pumpkin puree and pumpkin spice. After cooking, I cut out the hearts using a mini heart cookie cutter – the hearts make perfect little dippers and it eliminates the need for syrup.
SNACK – Oatmeal Bars with Pear & Kiwi
Healthy bars are handy. For breakfast, snacks, part of lunch or on the go. The recipe for these Oatmeal On The Go bars came from Weelicious and with some fruit on the side it made a great after school snack.
