LUNCH – Zucchini Pizza
We have been loving zucchini lately. The kids discovered that they really like it dipped in salsa, which led to me to serving these zucchini toppers. This time I thought I would take it a step further and melt the cheese, creating zucchini pizza. I was a bit leery about cooking the zucchini, the kids really like the crunchy texture. And I’ll admit, I am not a fan of soggy, overcooked zucchini, so I wanted to make sure to keep the crunchy texture.

To do that, I heated the Veggie Boosted Tomato Sauce first (the same one I used on the pizza we had for lunch here), then spread the zucchini slices out on a baking sheet, topped them with some warm tomato sauce, shredded cheese, an all natural beef stick sliced up and popped them in the oven under the broiler, just until the cheese melted. It took a minute or less, so watch them. This made for a nice warm topping with a crunchy zucchini bottom.

The kids went crazy over these and I had to make a second batch, but make sure to use a cold baking sheet if you make more than one batch, and not one that is warm from the oven.

SNACK – Bananas in Strawberry Milk & Blueberries
Bananas in milk is a super easy, healthy snack or breakfast that we have often. This time I decided to try something new and have bananas in strawberry milk.

I’ve had strawberry milk on the brain lately. I passed by some of that strawberry syrup that is loaded with sugar, and who knows what else, at the grocery store and I haven’t been able to shake it. Since keeping it simple is usually the way I roll, I decide to simply add a few frozen strawberries to some milk and blend it up (5 frozen strawberries to 1-1/2 cups of milk to be exact). Simple, delicious and pink:)

I served this bananas in milk snack as a MYO Snack which is a fun way for kids to interact with their food and learn some skills at snack time.

SNACK – Fruit Cup with Coconut
A great way to use up whatever ripe fruit you have on hand. Just cut it up, put a bit of each cut up fruit in small bowls and serve it with a sprinkling of coconut. Whatever is leftover pop in the freezer to use for smoothies. I served this snack with food picks – because it’s way more fun!
