LUNCH – Tuna Slaw Pitas with Veggies on the Side
Mini pitas are such an easy way to make lunch fun. Sliced in half and filled with Tuna Slaw Salad, these pitas were a huge hit. I find that stuffing these mini pitas, is easiest if done by hand, making it a perfect way to get the kids involved in the kitchen. If tuna isn’t your thing (or your child’s thing), chopped cooked chicken is a delicious alternative.
SNACK – Mini Pancake Bites with Cream Cheese, Berries & Grapes
This is the easiest pancake recipe ever. It makes weekday pancakes a possibility, with very little mess to clean up. When I make pancakes I like to use a gravy ladle because it makes a nice sized pancake for the kids, but I always make a few mini ones too, because they are so fun to dress up with different toppings and are easy for the kids to handle. Here I made a whole batch of the little ones, using 1/2 tablespoon of batter per pancake. It made a lot of mini pancakes. Enough that I lost count. And enough that I had plenty leftover, after this snack, to freeze for another day.
SNACK – Berry Apple Sauce with Frozen Smoothie Hearts
Berry apple sauce is what the kids named it, because if you stir the frozen blueberries into the apple sauce, the apple sauce turns purple. It’s a delight every time. Every time.
The frozen smoothie hearts are the same ones I served here. The kids love them! They are fun to make for special occasions (like Valentine’s Day) but they are also a perfect way to use up leftover smoothies.
