LUNCH – Easy Peasy Cheesy Noodles with Cauliflower
Cheesy Noodles is one of those easy lunches that I can always fall back on when needed. Whether it’s just been a crazy day, or the kids are under the weather and have lost their appetites, maybe there are no groceries in the fridge, or maybe we simply had a wonderful time playing in the yard and lost track of time. Whatever the reason, this lunch comes to the rescue.

Cook your pasta of choice, drain and toss with a bit of olive oil (or butter), top with cheese and a vegetable of choice (cooked or raw) and serve with frozen peas on the side, so the kids can eat them on their own, or add them to their pasta. Easy peasy.

SNACK – Cereal with Bananas & Raspberry Buds
My daughter loves frozen raspberries. Loves them! It is her snack or dessert of choice and she literally goes through bags of them. Many a time, I have planned to serve frozen raspberries as part of a snack, only to open the bag of frozen raspberries and find…raspberry buds. No raspberries – gone – just buds.

I have to admit, the first couple of times this happened, I was left with the feeling of someone leaving an empty bag in the freezer, but I soon learned that what they really left me was a gem. Raspberry buds are like little balls of fruit confetti that decorate and liven up the simplest snack. So don’t throw away those “crumbs” in the bottom of the bag. Save them up and make snack time (or breakfast) a celebration. Here we had wheat square cereal with milk, sliced bananas and sprinkled the raspberry buds on top.

SNACK – Blueberry Muffins all Dressed Up
One of our daycare friends turned one and to celebrate we dressed up some mini blueberry muffins with cream cheese and topped them with pretty pink coconut sprinkles. We popped a candle in one, sang a very enthusiastic Happy Birthday (many times) and celebrated another milestone. They all grow up so fast:)
