LUNCH – Hard Boiled Eggs & Clean Out the Fridge Veggie Skewers
I usually do my grocery shopping on the weekend, so by Friday the fridge is starting to look a little bare. And that’s the way it should look. If I’ve made a weekly meal plan, grocery shopped based on that meal plan and followed the meal plan throughout the week, then there really shouldn’t be that much left (except for the condiments etc.) and I’ve done a good job.

I’m also a firm believer of eating what you have, so whatever is left usually gets eaten on Friday. Which is how these clean out the fridge veggie skewers came to be. Pull out the veggies that are in the fridge and make a skewer out of them. Simple, fun and eaten! Pared up with some hard boiled eggs, it made a very nice lunch.

SNACK – Mini Pancake Sandwiches with Peanut Butter, Strawberries & Grapes
I made these mini pancake sandwiches with the leftover pancakes from Wednesday. This time I spread on some peanut butter topped with diced strawberries and grapes and finished them off with a second pancake, to make a mini sandwich. The perfect size for little hands.

SNACK – Hot Sauce Buttered Popcorn & Apples
This was my first time using hot sauce on popcorn, but while I was rummaging through the cupboards and fridge for a topping, I thought, why not! I was serving this popcorn to young children, so I went light on the hot sauce. You could definitely add more if you wanted more heat.

To make the popcorn – I added 1/4 cup of popcorn kernels to an air popper, to make about 6 cups of popped corn. I melted 4 tablespoons of butter and added 40 drops of hot sauce, I used Frank’s Red Hot Sauce, or 10 drops per tablespoon of butter. Then I poured the butter mixture over the popped corn along with some salt and stirred it all up. The apples made a nice sweet and juicy sidekick.
