LUNCH – Pita Chipped Tacos with Avocado Dip & Rice Balls
The idea for these Pita Chipped Tacos came about one day, while I was making these Chicken Pitas. As I was rolling them up, I thought back to the pita chips for the Fruit Nachos I had made for snack a few days back and thought that the crispiness of the pita chip would be great with a stuffed pita as well.
Following the same steps as the Chicken Pitas, I stuffed each of the quarter pitas with 2 tablespoons of taco meat, leftover from dinner the night before, and topped the meat with 1 tablespoon of shredded cheddar cheese. After rolling the pitas up, I placed them on a parchment paper lined baking sheet and brushed them lightly with olive oil. Then I baked them in a 350°F oven until lightly browned and crispy, about 10-15 minutes, and served them with Avocado Dip.
You could definitely add more toppings to the tacos, like peppers or onions, if you wanted to. I decided to keep these simple because it was our first time having them, but everyone liked them, so I know I will be making them again and you can bet we will be trying out some new combos.
SNACK – Yogurt with Energy Sprinkles & Oranges
My plan for this snack was to have yogurt, but I hadn’t decided yet what to have with it or top it up with. But while I was making the energy balls, that I had planned for our afternoon snack, I opened up the lid on my food processor (not sure why) and found a nice surprise – energy sprinkles??? Not yet mixed into the ball that would become the energy balls was this delicious and oh so pretty ground up topping, that I knew would be perfect for our yogurt.
SNACK – Energy Balls & Pears
We make energy balls pretty often. They are a great snack in school lunches, for after school activities or on the go. They are easy to make and I can usually find all the ingredients already in my pantry. The dates I keep on hand and we always have some nuts and dried fruit in the pantry. For these energy balls I used 1 cup of Medjool dates, 1 cup of almonds and 1/2 cup each of dried strawberries & dried apricots (because that’s all I had in the pantry, so I combined them). It turned out to be my favourite combo so far:)
