LUNCH – Kid Friendly Chili & Toast Squares
The two most common reasons, I find, that kids don’t like chili, are the spice and the kidney beans. This Kid Friendly Chili is mild enough for kids and I always tell the them, if they try the beans and don’t like them, than they can just pick them out – kidney beans are big, they are easy to pick out. As of this batch, my daughter officially likes chili!! It’s been a long time coming, but it happened. Apparently it’s easier to just eat the beans.

SNACK – Snack Play
We’re at it again…playing with our food. The kids enjoyed our last snack play so much, that I just had to do it again. This time it was building towers, block style. I cut up some cheddar cheese into cubes, sliced some carrots into discs and cut the grapes in half to create domes. Then I set the cheese blocks on their placemats and gave them a cup of “building supplies” and let them work away – nibbling and chatting and figuring things out.

SNACK – Sweet Potato and Kale Chips & Dip
This was my first time serving kale chips, to the daycare kids for snack, so I decided to pair them up with sweet potato chips & dip, because I already know how much they like them. When I brought out the kale chips a few of them shouted “I love those!” and they ate every last one – including the crumbs.

To make the kale chips: I washed and spun 1 bunch of kale, then tore off bite size pieces from the thick stem and placed the pieces in a bowl. I tossed the kale with 2 tbsp of olive oil and then arranged the pieces of kale on a parchment paper lined baking sheet, so that they were not touching. I bake them in a 350°F oven for 7 minutes, but set the timer for 5 minutes and then watched them like a hawk, so they didn’t burn. They should be crispy but not blackened, because that can happen if you don’t set the timer – just saying.
