LUNCH – Pork Tenderloin Melts with Pear & Arugula
The other night we were out for dinner and ordered pizza. They topped the cooked pizza with fresh arugula and lemon juice – it was delicious. So, we picked up some arugula and have been putting it on, well just about everything.
These pork tenderloin melts have become a favorite lunch around here. When we make pork tenderloin for dinner, we always make lots. The leftovers often are turned into melts – sometimes for a second quick and easy dinner, sometimes for lunches. For these pork tenderloin melts, I used cheddar cheese and topped them with a pear slice, some fresh arugula and a squeeze of lemon juice.
SNACK – Strawberries & “Cream”
This isn’t really strawberries and cream, but it sure is delicious. The “cream” is actually thickened plain yogurt that I added some vanilla and honey to and it is thick, creamy and decadent. I’ve wanted to try thickening plain yogurt to make it like greek yogurt, for some time now and I finally did it.
I’m not sure why I waited so long to try it, it was super easy to do. I just lined a strainer with a few layers of cheese cloth and set it in a medium size bowl. Then I emptied the container of plain yogurt into the cheese cloth, covered it with a clean tea towel and set it in the fridge overnight. I woke up the next morning to wonderfully thick greek yogurt.
To make the “cream” to dip the strawberries in, I used 1 cup of the thickened yogurt and mixed in 1/2 teaspoon of vanilla and 1 tbsp of honey. After spooning it into individual dip bowls, I sprinkled on some cinnamon and served it with fresh strawberries. So good.
SNACK – Mini Banana “Donuts” & Papaya
These were hands down the best banana muffins (I mean donuts:), that I have ever made. They are the same ones I made here, but with one difference. The bananas were sooooo ripe. So ripe. It really makes all the difference. It takes a little planning, and possibly may require hiding some bananas, but waiting to make the muffins (or donuts) until they are super ripe is worth it.
