LUNCH – Cucumber & Ham Rolls with Coleslaw and Dressed Tomatoes
These fun cucumber and ham rolls were super easy to make and were a big hit with the kids. I used a vegetable peeler to slice the cucumber lengthwise into long thin strips. Then I topped each cucumber strip with some ham, rolled it up and secured it with a food pick. And the great thing is the possibilities are endless for what you could fill them with. Cream cheese, spreads and/or dips like hummus or egg salad, julienned veggies or a combination of any of these, are what immediately come to mind, but that’s just the beginning – we’re going to have some fun with these.

The kids have really been enjoying coleslaw lately too. This one was a blend of shredded cabbage & carrots plus some raisins & walnuts all tossed with Creamy Coleslaw Dressing. Come to think of it, this coleslaw would be great in a cucumber roll too. The dressed tomatoes are simply grape tomatoes tossed with your favourite salad dressing, I used an Italian dressing here.

SNACK – Yogurt & Granola with Blackberries and Banana
This is hands down one of my favorite granola cereal recipes. I keep it on hand pretty much all the time and store it in a 1.9L mason jar. I like that I can switch it up, change the flavours and use the nuts and seeds that I have on hand. It is a great topping for yogurt, like I served here, but it is also delicious as a cereal with milk, yummy on apples pops, and is a quick snack straight from the jar.

SNACK – Apples & Strawberries with Peanut Butter Dip
This peanut butter dip couldn’t be easier, plus it’s healthy or what I like to call spoon worthy. What is a spoon worthy dip? It’s the kind of dip, that if your kids ate it with a spoon, you’d be OK with that. This dip also follows my goal of keeping it simple. It is simply peanut butter thinned with some plain yogurt to make a nice dip. I used equal amounts of peanut butter and yogurt, but you can add more or less yogurt to get the constancy that you like. It’s delicious with fruit like the apples and strawberries I served it with here, but it is also tasty with veggies like cucumbers, carrots and celery.
