LUNCH – Chicken Stew on Pasta
My oldest daughter went on a school trip to France this year. Before she left, they had a potluck dinner and requested that everyone bring a French dish – we made Poulet Basquaise, essentially a French chicken stew. I used chicken breasts, instead of chicken legs & thighs, because I thought it would be easier to serve a large group and I made triple the recipe, possible 4 times, anyway I made a lot. I decided to send most of it, but realized it was too much and froze some of it to save for later.
One night, a few months later, when I needed a quick dinner, I went through my freezer to see what prepared meals were hiding in there and I pulled out this stew and served it on pasta with some arugula and a squeeze of lemon juice. The reason I’m even mentioning all this, is first of all it’s awesome to have prepared meals in the freezer when you need them, but more importantly the reason I’m telling you all this, is because even though I pulled it out, and even though I cooked it, I did not think for one second my youngest daughter or most of the daycare kids would touch it.
But you know what? That night at dinner, my youngest had seconds and the next day at lunch, the daycare kids all said “this is soooo good”. They actually said those words. And what I was witnessing was change. My youngest wouldn’t have eaten it a few months earlier, but after a few short months of eating healthier home cooked meals and talking about healthy food and nutrition, change was happening. And that was pretty darn exciting.
So if you are trying to make some changes to the meals your family eats or if you are feeling discouraged by a picky eater at your table – just keep trying! Change will happen, look for it. Whether it is letting a disliked food be on their dinner plate, tasting the cherry tomato instead of just squishing it, adding less honey to plain yogurt (instead of buying store bought sweetened yogurt) or being more open to trying new foods – these are all changes in the right direction. Notice them and celebrate them.
This recipe is now a favourite of ours. Something I would not have guessed would be true, when I first made it.
SNACK – Apple Sauce & Smoothie Parfait
This fun “parfait” is simply apple sauce layered with a strawberry, mango & pear nectar smoothie. I first spooned the apple sauce into the cup and then spooned on a layer of the smoothie (any smoothie recipe you like will work). I left a bit of the apple sauce showing, to try to avoid the peek and dump that can occur when the kids look at their layered smoothie from the side:) I topped it off with some frozen blueberries and added wheat squares on the side for dipping.
SNACK – Parmesan Zucchini with Mustard Dip and Tomatoes
One of the kids started eating tomatoes today because of the mustard dip. This was one of those moments I was talking about earlier. Celebrate the small changes in the right direction. And boy did we celebrate:) Funny thing was that it was all because of that mustard dip (that’s a fancy name for mustard in a dip bowl). You just never know what will work and what won’t, but when I find something that works, I stick with it!
To make the parmesan zucchini melts, I cut the zucchini into 1/4 inch slices, sprinkled them with parmesan cheese and put them under the broiler just until they melted. You need to watch them though, because it doesn’t take long. They are delicious dipped in mustard, unless you are dipping your tomatoes in the mustard instead:)
