LUNCH – Chicken Meatballs & Veggie Sticks
The mustard love continues…intended for the meatballs, but used to dip the veggies in. Like I said yesterday, if I find something that works, I stick with it. I made the chicken meatballs using my Chicken Slider recipe. This is one of my go to recipes, because not only does everyone (family and daycare) love it, but it is also very versatile and such a time saver in the kitchen. I love that I can make burgers, sliders and/or meatballs from one recipe. Now you can pretty much do that with any burger/meatball recipe, and I highly recommend that you do, this recipe just happens to be one of our favourites.
Whenever I make this recipe, I at least double it and then I make burgers, sliders and meatballs all in one go. The burgers we usually eat for dinner that night with a vegetable (roasted potatoes or corn work well) and a salad. The sliders we usually have for lunch, but if your child(ren) can’t eat a whole burger for dinner, than sliders are a great kid portion size and they also make perfect little party bites. The meatballs, well they work for pretty much anything – for dinner with pasta and sauce, for snacks straight out of the fridge (this happens a lot in my house) and for school lunches or lunches at home, like I did here. And if I can, I make enough so that I can freeze some, then that’s even better because that means dinner, lunch or snacks are made and waiting for one of those nights when time is short.
Adding a food pick to eat them with makes it more fun for at home or school lunches.
SNACK – Strawberry & Banana “Ice Cream”
One of our favourite “treats” is made with frozen bananas and other frozen fruits to make an ice cream like frozen snack or dessert. For this snack I used equal parts of frozen bananas and frozen strawberries and topped it up with a dollop of greek yogurt and some mint. It’s a simple, healthy way to serve a frozen treat, especially now that the warm weather is here:)

SNACK – Egg Salad with Veggie Scoopers
One of the things I love so much about Egg Salad is that it goes well with both fruit and veggies. It also makes a quick breakfast, snack, lunch or even a light dinner along with a salad during the week, so one batch made up at the beginning of the week can be a big time saver.
I try to be mindful about serving vegetables in fun and interesting ways. Here I decided to leave out the carbs that often accompany egg salad and which, with some kids, can sabotage their veggie intake, and decided to use the veggies to scoop the egg salad instead. The kids loved it! It created an element of fun and a buzz of conversation about which veggies tasted and/or scooped the best:)
