LUNCH – Jacked Up Apple & Bacon Grilled Cheese Sandwich and ABC Soup
These grilled cheese sandwiches were so good. Cut with a pumpkin cookie cutter and filled with monterey jack cheese, an apple slice and some bacon before grilling, these “jacked up” grilled cheese are a nice switch up from regular grilled cheese sandwiches. ABC soup – fun and veggie packed – can’t go wrong there.
SNACK – Banana & Egg Pancakes with Cream Cheese & Strawberries, Raspberries and Clementine
Have you tried banana & egg pancakes. My oldest daughter told me about them after she spotted them on Pinterest. Then I saw them on Instagram over here. All you need is 1 banana and 2 eggs, blend them together and cook them like a pancake. I used a gravy ladle to pour the batter in the pan, it was the perfect amount to make these little pancakes. When I mixed up the “batter” and discovered how thin it was, I immediately thought of crepes. So, I carefully spread cream cheese over the pancakes, topped them with some cut up strawberries and rolled them up. Simple and so delicious!
SNACK – Make Your Own Popcorn Party Mix
This is a fun snack for kids. Being able to choose their toppings, mix-up their popcorn and eat their creation. Some kids choose to mix, some choose to eat the toppings separately – their choice. Kids love being the boss. Great for parties too! The toppings we used here were parmesan cheese, almonds, raisins and pomegranate – but they can be different every time. Just pick some healthy toppings and make your own popcorn party mix.
