LUNCH – Egg Salad “Sushi” with Tomatoes & Cucumbers and Pickles on a Stick
To make these fun rolled up “sushi” sandwiches just cut the crusts off of a piece of whole wheat bread (or whatever bread you prefer) and flattened with a rolling pin. Then simply add your sandwich filling, in this case Egg Salad, along one edge, along with some lettuce and roll it up and slice it. Oh, and pickles are just more fun on a stick – plus the stick is pretty handy when it comes to eating those tomatoes and cucumbers too!
SNACK – Mini Pumpkin “Donuts” with Coconut Sprinkles, Kiwi & Cantelope
I am in looooove with my new mini donut pan. LOVE! These mini pumpkin “donuts” are a healthy choice Whole-Grain Pumpkin Muffin Recipe (I used whole-spelt flour but you can also use whole-wheat) that I baked in the mini donut pan for 12 minutes. The kids were delighted. Donuts for snack! Yeah! Plus some very cute pumpkin cantaloupe that I cut with a mini cookie cutter.
SNACK – Apple Pops with Peanut Butter & Granola “Dip”
These were a super big hit with all the kids. I found this great idea on Instagram from Super Healthy Kids (you can find them here). I like adding the “dips” so the kids can make choices about what and how they want to eat their snack. Some just use the apple as a scoop to eat the “dips” and then eat the apple and others like to top up their apple and take a bite of everything together.
