LUNCH – Quesadillas with Avocado Hummus, Sugar Snap Peas & Peppers
Quesadillas are an all-time favorite around here. These ones were just cheddar on whole wheat tortillas but I also serve them other ways too – with refried beans, chicken or turkey and veggies. Sometimes for the older kids I find that quesadillas aren’t that filling, so to make them more of a meal and to add some veggies to the mix I make quesadilla sandwiches. The avocado hummus was delicious, mild and I liked that it had avocado in it. I discovered it in my Weelicious Lunches cookbook (which I highly recommend) but it is also available here.
SNACK – Steel Cut Oats with Cinnamon, Pear & Dried Cranberries
I like to add milk to my oats, but not everyone does so I usually put it in a small cup and let the kids decide if they want to add it to their bowl or drink it. I often do the same with the toppings, serving them in baking cups on the side, like I did for this snack. I also like to make more than I think we will eat because oats keep well for a day or two in the fridge and it makes a quick breakfast or snack when time is tight. I just stir in a bit of milk and reheat it.
We had a lot of pears in our fruit bowl that were ripening…fast. So, I cut all of them up into cubes, served up what the kids wanted and any that where leftover after snack I froze for future smoothies.
SNACK – Cucumber Cream Cheese Sandwiches with Shredded Carrots and Red Cabbage
First time serving these and it sure won’t be the last! Fun, colourful, tasty and I like that if the kids are uncomfortable with the shredded carrot and red cabbage being on their little sandwich, they can easily remove them and eat them on the side without any fuss.
Peeling clementines is a great opportunity for kids to work on life skills and fine motor skills. Depending on their current ability I might give them a fully peeled orange with a few segments still together. Once they have figured out how to pull apart the segments, I start to leave a bit of the peel on and eventually they are able to peel the entire clementine on their own.
