Sour Watermelon Ice Pops
Last week I was trying out a new recipe for watermelon fruit leather when a wonderful thing happened. Something I wasn’t expecting. After straining the watermelon puree, I ended up with almost 8 cups (2 L) of watermelon juice. I was shocked and I have to say pretty excited to get such a bonus. I immediately started thinking about what to do with the juice and came up with these Sour Watermelon Ice Pops.
My kids love sour treats. Unfortunately, those sour treats are usually in the form of sour candies, like sour keys, that I would prefer them not to eat. So I thought if I could satisfy their sour tooth, so to speak, in the form of a healthy treat then everyone would be happy.
This recipe can easily be doubled or tripled depending on how much watermelon juice you end up making. Just store the extra sour mixed juice in the refrigerator while the ice pops freeze. Once the ice pops are frozen, you can take them out of the mold and store them in the freezer. Then refill the mold with more juice. I like to store the frozen ice pops in snack size resealable storage bags. The ice pops fit perfectly and when the kids grab one out of the freezer we just take them out of the bag, and then I rinse the bags out and reuse them for the next batch.
If you decide to try out the watermelon fruit leather, like I did, and end up with a wack of watermelon juice, these watermelon margaritas are a fun treat for the grown ups and use up more of that juice.

- 2 cups watermelon juice
- 3.5 oz lime juice
- 3 oz lemon juice
- To make watermelon juice, puree approximately 4 cups of watermelon in a blender. Pour puree through a cheese cloth lined strainer, that is set in a bowl.
- I then poured 2 cups of watermelon juice into a 4 cup measuring cup. This makes it easy to both measure the juice and to pour it into the ice pop mold.
- To the 2 cups of watermelon juice, add the lime juice and lemon juice.
- Pour into ice pop molds
- Freeze for 3-4 hours or until frozen.
