LUNCH – Cheesy Rice with Turkey Broccoli & Carrots
This is an easy way to reinvent leftovers from dinner the night before. I made a cheese sauce by melting 1 tbsp of butter in a pot over medium heat. Then I whisked in 1 tbsp of flour until smooth (about 1 minute). Then I poured in 1 cup of milk, stirring until thickened (about 3 minutes). Once thickened, I removed the sauce from the heat and stirred in 1 cup of shredded sharp cheddar until melted. Then I poured the cheese sauce over some rice and stirred in leftover chopped turkey & steamed broccoli as well as some shredded carrots.

We have made the transition from vanilla yogurt to plain yogurt. For some of the kids they happily made the switch and for some a drizzle of maple syrup adds a little sweetness (but far less than the store sweetened variety). Here I used plain greek yogurt topped with some broken up Shredded Wheat and strawberries, a drizzle of maple syrup (for some) and a blueberry “popcicle” on the side. I made the blueberry popcicles simply by threading blueberries on a skewer and freezing them.

Have you tried making banana “ice cream”. We picked up a Yonanas Frozen Treat Maker last year and love it. It makes a soft serve frozen ice cream like treat out of bananas. I have also seen lots of pins on Pinterest showing how to make banana ice cream using a food processor, so you don’t have to own the machine but I have made it both ways and am glad we have the Yonanas machine. I just added frozen strawberries in with the frozen bananas then sprinkled on some coconut and some chopped cashews.
