LUNCH – Hard Boiled Eggs, Toast Rounds and Veggie Bundles
Hard boiled eggs are such a great thing to have in the fridge. A quick breakfast, an easy lunch – for school or home, and even a simple dinner when sliced and added to a salad. The toast rounds were bread cut with a biscuit cutter and toasted in the toaster. The kids could either make an egg sandwich or eat everything separately. Here are some tips on making perfect hard boiled eggs.
The veggie bundles were fun not only because the kids had to untie them, but they could also break up the chives into small pieces and add them to the sour cream/greek yogurt to make a dip – the carrots and celery are handy for stirring the dip.
SNACK – Smoothie “Soup” with Banana, Kiwi and Chia Seeds
I am trying to make sure that I add vegetables to all our smoothies. Spinach and kale seem to be the go to veggies. The kids can’t taste them and you need quite a bit to change the colour, but I always include the kids when making them, so they know what went into their smoothie. Trying to broaden the variety of vegetables that we have in our smoothies, I decided to break out the juicer (I have a juicer that I have never used) and make some carrot apple juice to use as the liquid in our smoothie. Juicing the carrots and apples was fun to do as a group and I was amazed how much juice we got from the carrots. This smoothie had 1 cup frozen strawberries, 1/2 cup frozen mango, 3/4 cup carrot apple juice and I garnished it with banana, kiwi and some chia seeds.
SNACK – Peanut Butter and Jam Pancake Sandwiches, Oranges and Pomegranate Seeds
This snack was inspired by Linzer cookies. I like to be able to include some Christmas traditions in our lunches and snacks without including all the sugar. The pancakes are the first batch of pancakes I made and froze last week and I used a mini star cookie cutter to create the cutout in the top pancake. It’s a fun way to celebrate the traditions of the season in a healthier way.
