LUNCH – Stir Fry & Sausage Bites
My husband makes the best stir-fry. So yummy. And easy too. A selection of chopped vegetables with some chicken or vegetable stock in a pan, add some leftover rice, season and done. We had this stir-fry for dinner and the leftovers for lunch. I served the sausage on the side for lunch but at dinner we mixed it all in. Really – so yummy!
SNACK – Cranberry Orange “Ice Cream” & Gingerbread Cinnamon Toast
I made the cranberry orange “ice cream” using my Yonanas frozen treat maker. Pretty cool thing – making “ice cream” out of bananas. It’s fun to experiment with, the kids like helping out and I can even make it ahead of time and store it in the freezer if I want. Plus it’s bananas and other fruit with no, or very little, added sugar. Here’s another recipe I made recently.
When I was a kid cinnamon toast was a favorite treat of mine, and why not, it was usually white bread with butter and the cinnamon was mixed with sugar. These gingerbread cinnamon toasts are a healthy version with whole grain bread (cut with a gingerbread man cookie cutter), butter and a sprinkling of cinnamon (minus the sugar). I have really noticed how much the kids love cinnamon this fall, leaving out the sugar has not been a problem at all.
SNACK – Peanut Butter & Jam Apple Sandwiches and Kiwi
Apple sandwiches are a kid favorite. “Oooh, apple sandwiches” is the reaction I get every time I serve them. Every time! These festive apple sandwiches are a take on linzer cookies. To make, I used a mandoline to slice the apple thinly and then used a mini cookie cutter to punch out the Christmas tree shape from half of the slices (which I used for the tops). I topped the bottom apple slice (without the tree cut-out) with peanut butter and preserves and finished with the apple slice with the tree cut-out.
To prevent the apples from turning brown, just soak them in 4 cups of water mixed with the juice of half a lemon for 5-10 minutes.
