LUNCH – Loaded Baked Potatoes with Ham & Tomato Skewers
Every time I make baked potatoes I wonder why I don’t make them more often. The kids love them, you can load them up with vegetables, they are great for just about any age group by cutting them up nice and small in a bowl for the youngest, to loading them up for the oldest. They also reheat well for quick snacks, lunches or to go along with dinner. My teenage daughter loves snacking on leftover baked potatoes loaded with broccoli and cheese – perfect for after school or before dance.
To make the baked potatoes – I scrubbed and dried the potatoes, then pierced them all over with a fork and rubbed them with some olive oil. I baked them in a 400°F oven for about 40 minutes, or until soft when pierced with a fork. To serve, I sliced through the skin on the top of the potato, pushed the ends together to loosen up the potato, added a bit of butter and topped them with cauliflower, broccoli and cheddar cheese.
To make the ham and tomato skewers – I rolled up a piece of all natural ham, then sliced the roll crosswise into 1 inch pieces. Then I skewered them with a toothpick, alternating between the ham and grape tomatoes.
SNACK – Pancake Sandwiches & Banana
I raided my freezer for this snack. This is the payoff for making double batches and freezing some. My daughter loves grabbing pancakes out of the freezer, for a school morning breakfast, and popping them in the toaster. And so did I when I made this snack. After toasting, I cut the heart shape with the heart in this Valentine’s mini cookie cutter set in the top pancake, spread peanut butter and strawberry preserves on the bottom pancake and sandwiched them together.
SNACK – Cereal with Milk & Apples and Kiwi
This cereal is a combination of 1 cup of oats and 1/4 cup of slivered almonds, baked on a baking sheet at 325°F for about 8-10 minutes. It is easy to double the recipe, if you want, and it stores well in a mason jar in the pantry for about 2 weeks. I just added milk and chopped apples and served it with some kiwi on the side. So much better than store bought cereal and it makes a great topping for yogurt or apple sauce too.
