LUNCH – Soup with Bread Dippers
I have been trying to make soup every Friday. Because I love soup. Because I’m trying to convince the kids they love soup. Because it’s a great way to eat vegetables. Because it’s winter. Because it makes great leftovers. Because we ski on the weekends, in the winter, and a bowl of warm soup at lunch really hits the spot.
I really liked this Italian orzo spinach soup and the pasta appealed to the kids. I also really liked the fact that there were 4 cups of spinach in it that, once added, really did not seem like 4 cups of spinach. I served it to the kids for lunch with a slice of 9 grain bread with the crust left on one side. Do you cut the crusts off for your kids? I used to, but now I leave some on, that way the kids who want to leave it behind, can easily do so, and the ones who want to – can gobble it up.
SNACK – Breakfast Cookies & Watermelon Hearts
Everyone loved these oatmeal breakfast cookies. I didn’t tell them that they were a healthier cookie, I just told them we were having a treat. And a treat they were – the kids were over the moon, absolutely could replace a regular cookie. Paired up with some fun watermelon hearts it was almost a party.
To make the watermelon hearts, I cut the watermelon into quarters and cut 1/2 inch slices from the quarter watermelon. Then I used the heart shape from this mini cookie cutter set to cut out the hearts, don’t throw out the leftover watermelon bits though, the kids will eat those up too (or freeze them for smoothies).
SNACK – Cucumber Boats
Such a simple fun snack, just slice a mini cucumber lengthwise, dry it off a bit with a paper towel, spread on some cream cheese and top with cut up veggies. I left these big for the older kids and cut them into smaller pieces for the younger kids.
