LUNCH – Avocado Deviled Eggs with Cucumber & Beet Skewers
Avocado deviled eggs have become a new favourite lunch for us, which I have to admit was a bit of a surprise. I love that I can boil the eggs ahead of time and then quickly make up deviled eggs at lunch time. But the part I love most is watching the kids devour them.
Serving food on a skewer is always fun, but it can also be a great way to introduce new foods or encourage kids to try previously introduced foods. Here I alternated between cucumber (a favourite) and cooked beets (some love them, a few don’t). I have served beets many times and one of the kids in particular, claims to not like them, but this time she gave them a nibble – I call that a step in the right direction:)
SNACK – Oatmeal with Raisins and Grapefruit
Oatmeal with dried fruit is a pretty regular morning snack for us. Adding different dried fruit keeps it interesting and is a simple add-in. If you want the fruit to be plump, add it to the water before bring it to a boil.
Learning to scoop grapefruit is messy business, but it has a lot of benefits. It is a life skill, it helps kids develop fine motor skills, it lets kids see and interact with the fruit in a more natural state. Plus it’s fun (fruit bowl) and tasty. To cut down on the mess, put the grapefruit in a shallow bowl to collect the juice. Once the all the grapefruit has been eaten, the rest of the juice can be squeezed, from the grapefruit, into the bowl and then the kids have the added fun of drinking the juice from the bowl.
SNACK – Apple Pops with Peanut Butter & Granola and Blood Oranges
These apple pops are so much fun, super easy to make and the kids love them. I find peanut butter, especially peanuts only peanut butter, makes me thursty, the apples in these pops are juice and crisp and are a perfect pairing with the peanut butter. I first found these apple pops on superhealthykids.com and the granola recipe is from 100DaysofRealFood.com
