LUNCH – Veggie Nuggets with Mustard Dip, Tomatoes and Cucumbers
Ok, I admit it I got lazy here. It was late and I was tired. So I skipped a few steps with these veggie nuggets from Weelicious. First of all I didn’t bread them, and second of all I didn’t pop them in the freezer and use cookie cutters. Now don’t get me wrong, if I wasn’t tired and cranky I would have followed the proper procedure but instead I used a 1 tbsp cookie dough scoop to measure the vegetable mixture , then I rolled it into a ball and flattened it into a mini patty. They certainly are not as fun as the cookie cutter shapes, but it got the job done and the kids liked the mini patties anyway.

SNACK – Apple Oat Bars, Kiwi and Pomegranate Seeds
I love this apple oat bar recipe from the Weelicious Cookbook, because it has only 4 ingredients, all of which I keep on hand, and it is a no-bake recipe which means it is super quick to throw together. The bars are also a great grab-and-go snack and are perfect to pack in school lunches. Plus the kids love them!

SNACK – Pita Wedges with Avocado and Salsa Dip
To make the pita wedges, I used store-bought whole wheat pitas, brush both sides with olive oil and cut them into wedges. Then I baked them in a 400°F oven for 5-10 minutes, turning them half way through. The avocado dip is just a mashed ripe avocado mixed with lime juiced and the salsa here was a mild store-bought salsa.
Like with all things, some kids love avocado and some kids don’t. If you find your child doesn’t like it, try serving it different ways. Texture is a big deal for kids. I have found that some kids like it served in chunks, that they can pick up and that some kids will only eat it if it is like a spread. The dip I served here was smooth and there were those that were happy to scoop it up with their pitas, but there were also a few that only liked it when I spread it on their pita.
