LUNCH – Chicken Sliders with Mashed Avocado
Chicken sliders are one of those meals that all of us like (family and daycare), which is pretty rare, but when it happens I like to take advantage, so we have been eating them pretty regularly. When I make them, I usually make half chicken burgers (which we eat for dinner) and half chicken sliders (which get eaten for lunch).
Here I served them warm, topped with some mashed avocado and a slice of tomato, alongside some sliced boiled mini potatoes, that I topped with arugula and a squeeze of lemon juice.
SNACK – MYO Oatmeal with Cranberries & Almonds
For this make-your-own oatmeal, I wanted the kids to be able to “dress” the oatmeal the way they wanted, so I cooked old fashioned oats on their own (following the package directions) and then served them with a bowl of cranberries and sliced almonds. I also included a little bottle of milk. Then they could decide to either add the toppings and the milk (or any combination of) or eat the topping on their own and drink the milk from the bottle.
The kids really enjoy MYO snacks. They are fun and interactive, the kids get to make choices for themselves and practice life skills at the same time (which, of course, they love:)
SNACK – Loaded Celery Sticks – 3 Ways
Classic kids snack served up 3 ways – minus the processed cheese spread. One with cream cheese, shredded carrots and raisins. One with peanut butter and shredded coconut. And one with cheddar cheese cut into sticks. A perfect after school snack.
