LUNCH – Roasted Asparagus Soup with Cheddar & Chive Bread Crackers
This Roasted Asparagus Soup with Lemon and Parmesan is soooo good. It’s also very kid friendly and a great way to serve asparagus to kids who don’t enjoy it roasted, steamed or raw.
I served it here in espresso cups, because it’s fun and practical – drinking soup is often easier for little ones, than eating it with a spoon. I also served it with some cheddar and chive bread crackers on the side.
To make the cheddar and chive bread crackers, I first made plain bread crackers using 4 slices of whole wheat bread (makes 36 crackers). Once they were toasted I pushed them all together on the baking sheet, topped them evenly with 1 cup of shredded cheddar cheese and 1 tbsp of chopped chives. Then back in the oven they went for about 5 minutes, until the cheese melted.
SNACK – Egg & Cucumber Bites with a Fruit Cup
When it comes to fruit and vegetables, fruit seems to be the preferred choice for the morning. I often wonder why that is and if perhaps our kids think this too, simply because that’s what we serve them. So, I try to include veggies in our morning snacks every now and then, just to give them an equal opportunity.
Eggs are an obvious morning food, so sliding in some veggies with them is a perfect way to include them in the morning. And you know what, the kids really couldn’t care less what time of day it is. They like them morning or afternoon. Just goes to show you how we get set in our routines.
Here cucumber slices are topped with egg salad and served alongside a fruit cup made up of cantaloupe and pineapple.
SNACK – Pear & Cheese Naan Pie
I found the recipe for this pear and cheese naan pie in a free magazine at my local cheese shop. It was delicious. And I left out all of the sugar! What I love about it (other that how good it was:) was that it would make a perfect snack, breakfast or even an appetizer. I will absolutely be making this again and will be experimenting with different variations too!
