LUNCH – Roasted Chicken and Cauliflower with Butternut Squash Cheese Sauce
Cooking a whole chicken each week is, hands down, one of my favourite ways to simplify making lunches. Not only does it mean we are eating homecooked chicken instead of luncheon meat, but it is done! Done! Waiting in the fridge to make chicken pitas, rice bowls, chicken salad or to just serve cold alongside some vegetables, like I did here.
The chicken wasn’t the only leftovers, that I used for this lunch. The butternut squash cheese sauce, on the steamed broccoli, is extra sauce from the Butternut Squash Mac and Cheese, that we had the day before.
So, a few minutes to steam the broccoli and to reheat the sauce and lunch was on the table. And I have to say that the cheese sauce performed double duty, because as good as it was on the cauliflower, the kids loved dipping their chicken into it too.
SNACK – Pink & Purple Smoothies with Cinnamon Toast Dippers
My daughters have been making layered smoothies lately for breakfast, so I thought I would give it a go, with the daycare kids, for snack time.
We love our purple smoothies, so it was a natural choice to start with. The second (pink) layer is made from blending fresh strawberries with just enough milk to make blending easier. I poured some purple smoothie into each cup, then used a spoon to layer the pink smoothie on top. Just a tip – little ones are likely to want to check out that cool layering, so I left a peek-a-boo of the layer underneath, so they could check out the two colours without dumping their smoothie – maybe:)
The cinnamon toast dippers are simply buttered whole grain toast, with some cinnamon sprinkled on top. I cut off the crusts, cut the slice of toast into four squares and then cut each square in half diagonally, to make triangles.
SNACK – Pear Wedges with Cream Cheese & Cinnamon and Strawberries
This is such a simple snack – quick to prepare, easy to make and dressed up just enough to make it fun and a little special. The kids loved it, but it would be just as nice on a warm summer’s evening, with a glass of wine for the adults.
To make them, I cut the pears into wedges, spread some cream cheese onto one side and sprinkled on some cinnamon, then served the wedges with some strawberries.
